Frito Pie

 This is one of Texas' most famous classy recipes.  Known for its BBQ and chili, Texas has found a way to utilize chili in the most simple but delicious way possible - Frito Pie.  You can be fancy and use real slow-cooked chili for this, and serve it in a bowl.  This, however, is not recommended.  We recommend using a can of Wolf Brand (c) Chili and a frito bag for your container.  Complete with plastic spoon or spork.

We don't know when Frito Pie came about- we do know that Fritos came about in 1932, and there have been Frito pies at least since the 1950's.

Ingredients:
1 snack size bag Frito chips 
1 can Wolf Brand chili
1/2 small onion, chopped
1/2 cup shredded cheddar cheese
Sliced jalepenos to taste
Sour cream to taste

Heat (or even better, microwave) your Wolf Brand Chili (only Wolf Brand will do) until hot.
Line bottom of frito bag with chips, then slather on the chili.
Add onions, cheese, and other toppings to your own personal taste.

Texas Fried Pie

Feeling short on grease and deep fried goodness? Ever wonder what it'd be like to put meat in some dough and simmer it in lard?  This is just the recipe for you.  Despite its unhealthy aspects, Texas Fried Pie is undoubtedly delicious. The best part is that you can put anything in a Texas fried pie- fruit, meat, or anything in between.  You could say this is the meal to end all meals.

Ingredients:
2 cups of flour
1/2 teaspoon salt
1/2 cup of lard, chilled
1/4 cup of cold water

Filling:
You can really put anything in the pie- here's a couple suggestions:
Blueberries 
Cherries
Chili
Ground beef
Pepperoni
Pulled chicken
Cheese

First, combine your dough ingredients until smooth, and refrigerate for one hour.
Heat filling until warm- usually a few minutes depending on what you are using (see individual recipes for more details)
Roll out dough to 1/4 inch thickness, then cut into 5" circles.
Place 2 tablespoons of filling into center of dough circles.  Fold in half and press edges with a fork or braid.
Place lard or oil in cast iron pan and heat to at least 350 degrees.  Cook for approximately 1 minute per side until golden brown.
